1.将野鸡去皮毛、去头爪、去内脏。浸泡后洗净

2. 同时把蘑菇浸泡2小时以上。

3. 然后把蘑菇摘洗干净备用。

4. 把野鸡斩块,冲洗干净。

5. 把野鸡肉冷水入锅,烧开后即可关火。飞水去异味。

6. 准备葱姜、大料。

7. 把飞水的野鸡块捞出,反复冲洗,洗净血沫。

12. 加入生抽

13. 炒匀后,加入清水。

14. 烧开后,小火煨制1小时左右,至野鸡肉软烂。

15.加入备用的蘑菇。

16.加盐调味,小火再烧制15分钟左右。

17. 加味精提鲜,即可关火。

18. 出锅盛入碗中,即可上桌。
小窍门&温馨提示
1、野鸡肉不易熟烂,所以一定要把野鸡肉煨制熟后,再放蘑菇。
2、因为烧制的时间较长,所以一次要把水加够,免得中途加水,影响味道。
